(please excuse the fuzzy picture!) Just around the corner from home is a place that sells bee keeping supplies and at any one time has about six different honeys from which to choose.
I love to visit regularly and try each of the honeys on offer. I find it quite amazing that honey flavour varys so much dependent upon the flower on which the little fellows have been feasting.
Today's choice? Stringybark.

Meanwhile, we use honey so little, that every two years or so, I discover it's all hard and crystallised and needs to be replaced & repeat.
It used to be every year, but I no longer do the Christmas Feast.
